It is the altitude and exposition which distinguishes this wine from the R.ive Z.ulle. In the Riva Alta vineyard, grapes are grown in calcareous clay soil between 300 to 379 metres above sea level. Due to the south, southwest and west orientation of the slopes, the grapes obtain maximum ripeness during the summer.
All the grapes are hand-harvested and selected on a sorting table. Selective native yeast is used in the fermentation in temperature-controlled stainless steel tanks. After fermentation to zero residual sugar, the wine is transferred to small acacia wood barrels. The wine goes through secondary fermentation in the bottle so that carbon dioxide is naturally produced and then it is left to age on its lees. Finally, this wine is unfiltered and bottled is with very low sulphites to retain purity and complexity of flavour.
This bottle-fermented Prosecco has citrus and pear aromas with mineral undertones. A crisp and refreshing wine with smooth bubbles unlike traditionally-tank fermented Prosecco.
