The difference between this wine and R.ive A.lte is the altitude and exposition which it is grown. The grapes are grown over a calcareous clay soil in the Riva delle Zulle vineyard between 200 to 246 metres above sea level. The west facing slopes allows the grapes to obtain maximum ripeness during the summer. All the grapes were hand-harvested and selected on a sorting table.
Fermentation is with the use of selected native yeast in temperature-controlled stainless steel tanks. After fermentation to zero residual sugar, the wine is transferred to small acacia wood barrels. Secondary fermentation occurs in the bottle (Methode Ancestrale) to naturally produce carbon dioxide and then the wine is left to age on its lees. Finally, this wine is unfiltered and bottled is with very low sulphites to retain purity and complexity of flavour.
Hints of honey and floral aromas of chamomile and wild flowers can be found in this bottle fermented wine. Its palate is dry, refreshing and yeasty with a tinge of bitterness and smoother bubbles than traditionally-tank fermented Prosecco.
