A pairing for those who enjoy the finest in life. The Crown Jewel of Castelveder- Millesimato NV meets Champagne Pierre Mignon Blanc de Blanc.
Castelveder Millesimato NV
I spent quite a bit of time looking for a good Franciacorta (Italian sparkling wine) as it is not easy to come by. I am happy to have discovered Castelveder as they produce wines of finesse and character which showcases the grape varietal to its fullest.
2007, Dry, 13%, 750ml
Selection of the best Chardonnay grapes, five years lees aging before disgorgement, Residual sugar 8 g/l.
Nose is full of honey, bacon, biscuit and sweet corn due to the aging period. On the palate, the complexity is accentuated by the savoury flavours of yeast and biscuit accompanied by a very long length. The Crown Jewel of Castelveder.
7-10°C. Breath 30 minutes before serving. Up to 7 years
Rich cream-based dishes or tortellini with butter-sage sauce.
Champagne Pierre Mignon Blanc de Blanc Grand Cru
Dry, 12%, 750ml
Made exclusively with Grand Cru Chardonnay from villages in the Côte de Blancs, Chouilly and Cramant. This elegant single varietal is the essence of finesse and refinement. On the nose, lemon, red fruits and a hint of gingerbread in the finish. This champagne is full of power and delightfully refreshing, with a long elegant finish.
100% Chardonnay, 8 – 9°C
Up to 5 years.
Drink by itself or with oysters squeezed with lemon / shellfish dishes.
Tasted June 2015
Pale yellow. Fairly subdued, fruity nose. Pleasantly textured palate with silky effervescence, more intense aroma and a finish that stays fresh and fruity. A Champagne that requires a little attention.
